Distillation Licence No. 2

One of Piemonte's oldest distilleries — active since 1888 and holder of distillation licence number two in the province. That number is a historical document in itself: it places the Bosso family among the very first to operate a legal distillery in the Astigiano, at a time when grappa was being formalised from a farmhouse tradition into a regulated craft. Traditional steam distillation of Piedmontese pomace is the method used today, the same method the family has always used — the steam heating process is slower than direct fire but produces a cleaner, more aromatic distillate that carries the character of the grape variety rather than the heat of the still.

The range includes grappa invecchiata aged in barrel — which softens the spirit and develops secondary flavours of vanilla and wood — and distillates from single varietal pomace that express the particular aromatic profile of Barbera, Grignolino and Moscato grapes. A visit to the distillery is an education in the craft, and the Bosso family receives visitors by appointment with the kind of openness that comes from having nothing to hide.
