Four Generations of Master Pastry-Makers

Since 1959, four generations of the Panzini family have been making pastries in Montechiaro d'Asti in the same shop with the same approach: seasonal ingredients, traditional methods, no shortcuts. Their flour-free hazelnut cake — the "Nocciolina" — is celebrated across all of Piemonte, made with IGP Tonda Gentile hazelnuts from the territory and nothing unnecessary. The absence of flour is not a concession to dietary preference but a deliberate choice that concentrates the hazelnut flavour into something considerably more intense than the same ingredients handled differently would produce.

The pastry shop also produces a range of traditional Piedmontese confections — hazelnut chocolates, almond paste, seasonal torte — all made by hand in the same way they always have been. The Nocciolina is available to take home and travels well, making it one of the more considered things you can bring back from a stay in the Monferrato.
