At Cantina Nicola, the sequence is deliberate: you taste the wine first, then sit down to eat. It is a family cantina where Barbera and Grignolino are made on the same estate and poured straight from barrel-aged batches that have not been dressed up for commercial presentation. The tasting — whether you are shown the cellar or simply poured at the table — gives you the grounding you need to understand what follows, because the food is designed to be understood alongside the wine rather than in spite of it.
The cooking is traditional Monferrato: the kind of dishes that have been made on these hillsides for generations, built from what the estate and the surrounding territory produce. Nothing is showy, and nothing needs to be. The combination of estate wine and honest food, served by the family who made both, is the whole point.
