A stone courtyard and elegant dining rooms with a 500-label Piedmont-only wine cellar and an on-site infernot — the underground chamber unique to the Monferrato, carved from calcareous tufa stone and used for centuries to store wine at constant temperature, a tradition so particular to this territory that the infernot itself is listed as UNESCO Intangible Cultural Heritage. Handmade agnolotti, braised tripe, slow-cooked tongue: the cooking is old-Piedmontese in the most uncompromising sense, the kind of dishes that require patience and skill and refuse to be simplified.
Guest rooms and a bottega shop complete the picture, making Fer.Mo a full Monferrato destination in itself rather than a single-use restaurant. The wine list — 500 labels covering the full breadth of Piedmontese production, from Barolo to the local Barbera and Grignolino of the Monferrato — is one of the most serious in the territory. About an hour from Bric del Vento, and worth the drive for a special evening. Reservation is essential.
